Throughout the “live” food and beverage event process you will compile a portfolio of evidence of your group’s organisation, planning and delivery of your event. Indicative word count is 2000. The assessment should be presented in portfolio format and should include in the following order:
A table of contents
Group Portfolio Pro-forma (see the next page)
Your Menu Specification
A copy of your menu
Menu costings
Menu Analysis (how many dishes sold etc.)
Any Sales and Marketing materials you have created
The allocation of duties for the event/rotas
Catering Services documentation, booking forms, food ordering sheets etc.
Risk Assessment
Event planning tools you may have used, for example, timelines, Gant charts, walkthroughs and action plans
Table plans
Pictures/samples of table/room decorations
Entertainment
Any other appropriate evidence about the planning and managing of your food event you see fit
You should complete the event pro-forma answering the following questions about your performance as a group:
What went well and why?
What went less well and why? (feedback/evaluation from the client and customers)
And finally, in light of your experiences with this event what would you do, as a group, differently when planning and running future food based events?
