For this assignment, you are to create a presentation for the population identified in one of the two prompts (only select one). Use digital media of your choice such as PowerPoint or Prezi presentation (can be narrated), Video, or infographics (10 free tools for creating infographics).
Prompt 1:
Why do I have to eat my broccoli? Why do I have to take milk with my lunch? You’ve probably heard these questions before. Kids are curious, and teaching them about nutrition can explain why we serve healthy meals and snacks at school and home. Teaching students about the science of nutrition and the benefits of each food group can help promote healthy eating from a young age. For this prompt, you are to create a presentation for 9-10 y.o. students in a HealthEd class.
Your presentation should educate the students on food sources of vitamins B6, B12, C, D, E, K, Folate, Thiamin, Riboflavin and their main roles in the body. You can use a school or other family restaurant menu as your guide. You can cover all the vitamins or go more in-depth selecting three vitamins.
1. Connect your nutrition lesson to foods commonly served in a school cafeteria and at family meals using it as a way to encourage kids to try new foods at lunch and at home.
2. Create a presentation that provides specific food sources for B6, B12, C, D, E, K, Folate, Thiamin, Riboflavin vitamins, their roles in the body and health benefits.

For this prompt, you can select an important global health issue related to malnutrition due to micronutrient deficiencies. Unlike hunger and undernourishment, which is easy to recognize, deficiencies in essential micronutrients including iron, zinc, calcium, iodine, vitamin A, B-vitamins, and vitamin C, are not always acutely visible. However, diets lacking micronutrients have a detrimental effect on physical and mental development in children, can cause mental retardation, blindness and general losses in productivity and potential. For this prompt, you are to create a presentation for high school to college age students in a HealthEd class.
Discuss trends and prevalence of each selected micronutrient deficiency.
Describe the potential impacts of these deficiencies on health, lifestyle and economy.
Share with the audience about traditional and new strategies for preventing or reducing these deficiencies on individual and population levels.
